Recently.

Time for another update! Nursing school is approaching so so fast! Its a very bittersweet moment. Leaving campus and all the relationships made here is not something I look forward to, but living in Dallas with one of my greatest friends most definitely is. I cant wait to get a more hands on experience helping others and learning even more about the makeup of life. After learning the complexity of just one heart beat in anatomy a couple weeks ago- its so crazy to me how people can still question God's existence. I'm excited to be given more opportunities to express God's love to people.

We had a small Nursing School induction ceremony on campus the other night. I am so thankful for such loving parents and such a close-nit group of friends. 






Last weekend was Baylor's Homecoming. Such a fun filled weekend with the bonfire, parade, football game, family, and friends. Baylor puts on a huge parade every year. Despite its early start (8am!) its always neat to see the creativity in the floats, the smiles that the candy tossed puts on the faces of little future baylor bears, and the all around family experience. Even though the rain was flooded out for most of the time, causing the game to be hours delayed, Baylor still came out with a win and are ranked for the first time in almost 2 decades! Sic em bears!




I could go on and on and on about many different things, but class is calling my name (only one more month left in the semester... woo!) 

Heres a little something I 'stumbled' on:



No Bake Chocolate Peanut Butter Oatmeal Bars
Ingredients:
  • 3/4 cup butter
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups quick cooking oats
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup peanut butter (smooth or chunky)
1. Melt butter in a large sauce pan over low heat. Stir in brown sugar, vanilla, and oats. Cook for 3 to 4 minutes. Press half of mixture in to the bottom of a buttered 8 x 8 dish.

2. In a microwave safe bowl, microwave the chocolate and peanut butter, stirring every 30 seconds until melted and blended. Pour the chocolate peanut butter mixture over the crust, reserving a couple of spoonfuls to drizzle over the top.
3. Sprinkle the remaining oat mixture over the chocolate and peanut butter, pressing gently to form a crust. Drizzle the remaining chocolate and peanut butter over the top of the bars.
4. Refrigerate for 3 hours before cutting and serving.
